Coconut
looks different from the smaller nuts and is extremely unique in its benefits.
It offers a multitude of options to be useful to us. There is coconut milk,
coconut oil etc. It is nutritious and rich in fibre, has vitamins C, E, B1, B3,
B5 and B6, minerals like iron, selenium, calcium, sodium, magnesium and
phosphorous. Coconut milk is lactose free and can be used as milk substitute
especially those with intolerance for lactose. It is a good base for milk
shakes, smoothies or in baking.
